I'll copy/paste a similar guide by dan-erik that he posted as a comment on our GS11 download page. I didn't check if it's the exact same process, but I'm including it anyway.
Here's a step by step guide to make a working Mac OS X app.
1) Download Winebottler and install from http://winebottler.kronenberg.org/
2) Download and unpack the Genie Scout installer
3) Double click on the GS exe file and open it with Winebottler
4) Choose "Convert to simple..."
5) Click "Install" in the next window.
6) Name the app "FM genie scout" or similar and choose to install it in your program folder
7) The GS installer will open. Just follow the steps and install in the default directory.
8) UNCLICK THE LAUNCH APPLICATION IN THE LAST STEP OF THE INSTALLER!
9) In the select Startfile choose the FMGenieScout.exe
10) Open Genie scout and fully enjoy FM 2011 :).
