No worries, have sent you DM with more detail but in simple terms:-

Originally headset, now a microphone plugged into PC.
Record screen & audio using OBS Studio (free software) - used this video by DoctorBenjy for settings help etc - it was useful.
Edit using Shotcut (free software) - a bit clunky but other alternatives are costly, it does the job fine.
For all other important info I watched this series by lollujo which was really helpful.

Hope this info is useful.
