I've always thought Spurs would be a good team to manage. They're not title favorites but with one or two signings they could win the league.

Yes, but for a long term story, you don't want a big club. If you want to stay in England, I recommend Leeds. You can lead them back to glory, and it will stay interesting and challenging, because you're not starting at the top.
If you're for moving away from England (I always am), I recommend either 1860 München or St. Pauli. München (Munich) has a huge stadium (Allianz Arena) and has a nice rivalry in the Bundesliga when you get there, while St. Pauli has a bit better team.
