I can't change any players attribute/age/abilities and club's financial status

Nothing changes in the game when I change values on FMSE19

Assuming you purchased a license that would enable you to save your edits, try the following:
1) Continue in-game to the next day
2) Clear Cache (button found in-game at Preferences > Interface)
