Kind of hard to say considering the game isn't even out yet, wouldn't you say? But yes, FM has worked with Mac for many years now, I'd strongly expect FM21 to be the same, anything else would be extremely weird.
It should work fine, but you’ll probably have to lower the graphics settings. Heating/fans are often an issue with Mac’s and this is made worse when running 3D matches with decent graphics quality.
Another thing to bear in mind is the screen size. I used to have a 13” Mac and always struggled to get the balance between text size so I could read it and fitting enough information on the squad screen etc.
